(Mae ...Raspberry-Cranberry Salad<br /> (Mae Rainbow) <br />1-6oz (or 2-3oz) pkg raspberry <br /> gelatin (jello) <br />1-16oz (2 cups) whole cranberry sauce <br />1-8 3/4oz can (1 c) crushed pineapple<br />1/2 cup water<br />1/3 + cup chopped nuts (pecans)<br /> Dissolve gelatin in 2c BOILING water. Stir in cranberry sauce, UNdrained pineapple and 1/2 cup water. Chill till partially set. Stir in nuts. Pour into 6 cup mold (or bowl).<br /> Can be served with cheese fluff topping--cream cheese beaten with cool whip, whipped cream or just cool whip (easiest!).<br /> I am remembering Mae serving this following a women's meeting in her lovely home with her usual quiet charm. Her home and manners were so different than mine with four 9 to 15 year olds!
